100% Grass Fed and Finished or Grass and Grain Finished
Our Beef Cattle are raised on pasture as much of the year as possible. They are only confined when weather conditions do not allow us to keep them on the pasture. During the spring, summer and fall they are moved everyday to a new paddock of grass with fresh water. They are also moved every afternoon to our shade area so they are not in the hot afternoon sun. This keeps them healthy and productive. ( Be sure to watch the video to see how this done everyday.)
We have two kinds of beef to satisfy every taste. We have all grass fed beef and we also have grass and grain fed beef. Our grain fed beef is fed our non GMO corn and we do not use any antibiotics or hormones in the cattle or feed. Our all grass fed beef has never been given antibiotics or hormones or grain of any kind. What you get is an All Natural great tasting beef with lots of flavor and marbling.
Many or our customers tell us this is the best beef that they have ever had.
What is dry aged beef? Why we go to the extra expense of dry aged beef.
Dry aged beef doesn't come from supermarkets. It comes from us and our local processors who take the extra time and care to allow the harvested beef to "chill out" in a climate controlled cooler for a minimum of 2 weeks. Dry aging of the beef is an added expense because of the decreased weight because of evaporation, increased processing time, limited space, and additional refrigeration.
So why do we bother?
evaporation=greater concentration of flavors
enzymes breaking down connective tissue= more tender meats
The dry aging allows the natural flavors to be enhanced while making the meat more tender. Qualities we think are worth the added time and expense.
Questions???
A lot of people have asked how we can have both grass and grain fed cattle on the same farm. Our farm is divided into basically three sections,each being separated by a road. Part of our farm is across the road from us which is where the grain fed animals live. It has a barn and a pretty level pasture behind it making it great for this part of the operation. The part surrounding our house has a slightly rolling landscape and a few too many trees for crop farming, so this is ideal for pasture land. The last section has a few smaller level fields divided by a tree line from an old railroad , the neighbors wood and a road with our pasture field on the other side making this ideal for growing non GMO crops.
